Sorry, I've redrawn the part from scratch and it's working fine.. a workflow issue I think, but not sure what I did wrong.

Producing the text as a solid and then performing a boolean cut has worked for me. The process is covered here: https://wiki.freecadweb.org/Draft_ShapeString_tutorial You'll find a youtube tutorial covering the same part/process I believe. This uses Part Design/Part workbenches. I was going to say 'No, that's not it'... but it is... the disc is the result of boolean cut, where the original uncut object is hidden. If I unhide that I can see the sketch.
