cd to FreeCAD's bin directory and run:

LD_DEBUG=libs ./FreeCAD 2> libs.log
This shows you what the linker tries at runtime and may give a clue what happens with Part.so.

I am not exactly sure what to do with this list. Now the problem is when trying to open the Part Workbench on the compiled FreeCAD, it crashes with:
Check with ldd which libraries Part.so depends on:

Do you run the binaries on your own? At almost the end of Mesher::createMesh() (src/Mod/MeshPart/App/Mesher.cpp) the smesh is deleted and for macOS this causes problems. You can disable this line (delete mesh;) and retry the meshing several times. However, you likely get a memory leak then.

ModuleNotFoundError: No module named 'Mesh'
Depending on your OS your FreeCAD installation should have a file Mesh.pyd (Windows) or Mesh.so (Linux or macOS). Can you find the file?

Can you run FreeCAD within the context of a debugger (on OSX the tool is lldb IIRC)?

So, it should be something like
