Is it always slow or only on lager files. If it is only on lager files try: Menu --> Edit --> Preferences --> Display --> Colors --> and deselect "Enable preselection highlighting". But for information: if you do not move in FreeCAD (the display is static), the FPS counter is always down. Greetings ...

No, make a lokal build and do not install it. You can start FreeCAD from the bin folder. And if you want to delete the built, just delete it.
