you have at least 3 possibilities:
-Write a text as said above
-Write text in the drawing itself with Draft Wb
-Write text in a spreadsheet

the profile must "wrap" around the path so that it does not have an auto intersection, and "transform" on "Right corners" (or round)

I don't see the point in making a plan of the blank, folding it then unfolding it Don't say that you are a beginner, when you read your sketch, you can see it (this is not a criticism) uses equalities, symmetry, alignment and finally everything that is geometric before the dimension and no =0mm unfo...

no, it's better not, as you see it doesn't distribute the thicknesses correctly
do the T then the V, you can also easily manage the Middle, Right or left

Trim breaks constraints in a sketch that was constrained, it's understandable: lengths, circles, symmetries are cut in two, it's frustrating, but there are no solutions

if you do the sketches with sketcher (outside the Body),
there is no point doing Binders , ShapesBinder , Sub...., SubSub....
you drag the sketch with the tip of your mouse into the Body
to make the groove: if the radius is too small to risk self-intersection, you have to redo a path
