Something Im sure "You doing it wrong" I struggle with often.
Is add an eternal geometry point. I then add a co-incidence contraint to say a circle. Now later it turns out they can be aligned, they need to be offest a little. So now I wish to delete the co-incidence constrain and add a little clearance. What is the recommended process?
I select the point that has the co-incidence with the external geometry, then I click this, but have never had any luck with this (it just seems to deselect the point I select):
Normally I default to deleting constraint in this list try move it, undo, try delete another constraint, repeat...

The indicated tool selects all constraints attached to tha previously selected geometric element.
To remove a coincidence you can use the box selection. However, if you have only a point as external reference, it will remove that point as well. It may still be faster to re-add it, than to inspect all coincidence constraints.
