While my design was created in US Building/Arch units (lb/ft/in) and the preference was set for this, FEM load input only seems to accept kg/mm^2 units. How can I change that?

I don't think it is possible. http://www.feacluster.com/CalculiX/ccx_ ... node4.html stated Caclulix is SI unit only.
Which means FC have to do the conversions.
As all current FC FEM users use SI units i think you have to calculate it or you have to implement it

This depends if the FreeCAD FEM object ui supports FreeCAD unit system. In pressure object for example you should be able to input imperial units. In force object this is for sure not possible.
