Hello,
I'm using the 0.19 Appimage version.
every time I start Freecad from the scratch and try to load a saved file it always point to an folder that I'm not using since many months.
How to change this very annoying behaviour?
I searched across the preferences, but seems that there is no option for that...
P.S.
After opening the first file all of the successive "Open file" operation are correctly pointing to the last used directory. But, again, if you close Freecad and start it again, then he will forget the last opened file and directory...

for me it refers to the folder in which the app image is located. I think that's very practical because from then on I also have my working directory. files can also be checked out from a file server

No no.
Every Appimage I downloaded is pointing to /home/giulio/cadbook when I try to open a file.
The Appimage is stored in /home/giulio/appimages/ instead.
Note
The old 0.18 version (no Appimage) is always pointing to /usr/lib/freecad when I try to open a file.

I don't know from where come "/home/giulio/cadbook". I searched across the user.cfg file but I haven't found anything about that.

The App image starts in the current working path. If you start the Appimage from the console: cd into your desired folder and start the Appimage from there.
If you are like me and you want FreeCAD to always start in your project folder, without messing with the terminal, you can create a launch file for your applications menu. On KDE you can edit the start menu and add a new item. For me the Appimage for FreeCAD mainline is called FreeCAD Std. For the launcher you can set up the working directory. For me it looks like this:
